Dublin Yelpers Taste Cocktail Magic @ The Exchequer
Oh what a night! Humid as a Mississippi day. When the air is heavy and your brow is perspiring there is only one thing to do, drink some cool cocktails and ice cold beer - oh yeah!
Darren, bar manager and cocktail mastreo got things started with some tea cups. We all had Hendrick's high tea and the presentation was an ode to Prohibition times. On Darren's orders we all stuck our pinkys out. Next up was one of his signature cocktails, Mr Exchequer. The spicy rum flavours mellowed the masses out and made us forget about the heat! Keeping things tropical we then imbibed a passion fruit & thyme caipirinha!
Then came some cool toffee infused Innis & Gunn rum cask followed by Ireland's own, Dungarvan's Helvick Gold. All this alongside platters of crispy pork belly squares with fish sauce caramel, potato skins with sour cream & chive creme fraiche & lemon pepper calamari. Finally came our digestif which was an espresso martini with coffee beans floating on top, being high never tasted so good.
Darren and all The Exchequer staff are passionate about what they do. Last night was not a case of them filling our glass every second, Darren and Patrick explained in detail how to make the cocktails, the history behind them.
